Distinct taste and texture

Composed of 100% rye, this flour will bring to your products flavors that are anything but tasteless. The atypical taste of rye is more pronounced and more sour than traditional wheat.

Containing little gluten, rye absorbs a lot of water that will give a compact texture to bread.

High level of fiber

Made of whole grains, this four contains a good quantity of beta-glucanes, soluble fiber. The richness in soluble fibers of rye improves cholesterol and helps master glycemia, as well as reducing the risk of coronary hearth diseases.

Rye also has a high level of insoluble fibers wich allows a better control on appetite and has beneficial effects on the digestive system.

Add character to sourdough

Rye flour is ideal for sourdough confection. Its distcs aromas and its sourness will add character to sourdoughs.

Unbleached rye flour from Quebec is a stable product. Stored preferably in a cool place, with a temperature between 16-20°C and 60% humidity rate. In these condtions, the shelf life is 6 months

Every flour bag bears a lot number which allows to trace the origin of the grain and the mill date. The first six (6) digits indicate the calendar date (year, month, date).
